At 16 rue Vieille-du-Temple, WHITE Coffee unfolds a space that escapes usual conventions. Designed as a field of inflexion—a place where light curves, where trajectories converge—the space organizes attention around a center of gravity: the act of coffee preparation.
From bean to cup
Specialty-grade coffee roasted with precision, mastered extractions, consistent gestures. Vieille-du-Temple maintains the same technical rigor as all our locations, but develops a radically different architecture. Here, three devices structure the space: an optical well in the ceiling that concentrates light, a gravitational plane on the floor that guides movement, a diffusion chamber in the background that stabilizes the visual horizon.
ARCHITECTURAL SIGNATURE
Light and gravity as organizing principle
The architecture refuses ornament. Each element participates in a functional logic: the vault collapses into a truncated cone, light accumulates and falls back, focused on the coffee zone. The elevated glass floor organizes light flows like a gravitational plane. Gazes, bodies, trajectories resonate with this spatial field. Vieille-du-Temple isn't décor—it's a luminous mechanism serving the ritual of coffee.

Our offering remains faithful to our principles: perfectly extracted espresso, balanced milk drinks, smooth matcha, house-made cookies. No excess.
